A decidedly cool coffee that we have access to which we shouldn't. To my knowledge in all of the USA we are the only ones who have it. Mostly sold to the UK and Japan and what is made is a very small amount due to what I won't totally explain but will share some background on.
This coffee is sort of experimental in the natural processing way. It's basically left to ferment a little longer than it should with the cherry on, on certain sides. It can go terribly wrong but also still taste terribly good. It's very very fermenty but not anaerobic. It's about as close as you'll get to it. It's funky but not too, fruity but not too, red winey but not too, floral!!!! but not too (due to the Ethiozar varietal). It's not a lesser Anaerobic with all those "not too's". Please extend a level of trust here, it's really cool and shows you some sort of where if you go far enough you start to come back round to the other side of another thing.
If y'all like this enough, I will do everything I can to make this a yearly buy.
