We've run through a few decaf's from the Guatmela Waykan to the Nicargua El Encanto, and prior to that a spattering of Rwanda, Kenya's and even an Ethiopian. As I've learned about myself a coffee needs to meet a criteria in order to be stocked which seems to be an ever moving target. However for a decaf essentially it needs a pleasing/warm mouthfeel, nice sweetness - ideally crisp, and some hints of pepper, or chocolate/cocoa mix somewhere. I tend to dislike really light roasted decafs as they turn out bread like, but being gentle does lead to those warm tones like a hot chocolate. I also want it to be applicable for espresso purposes which leads to this light/medium combo.
It's been hard to stock it on the website as a lot of it is meant for wholesale and supplies are so limited I ended up not being able to fulfill the orders that came in. With that said I've settled in on a coffee that met all of my criteria this very nice regional Brazil Mogiana coffee, though I'm sure I'll get antsy and change it up before the year is over. Variety is the spice of life, right?
